Greek Pasta Salad with Grilled Chicken Sausages

This pasta salad will have everyone at your summer gathering coming back for more! Start by cooking a box of fusilli pasta according to package directions, drain, and rinse well under cold running water to cool. For the dressing, whisk together two-parts extra-virgin olive oil, one-part red wine vinegar and a spoonful of Dijon mustard in a large bowl, and season with salt and pepper. Add cooked pasta to the dressing along with some Greek salad must-haves, like sliced green peppers, mini cucumbers, red onion, cherry tomatoes, crumbled Compliments Feta Cheese and pitted Kalamata olives. Serve it up with Compliments Chicken, Feta and Spinach Sausages on top and a little extra feta and olives as garnish– yum!

Grilled Sausage Souvlaki

Fire up the grill– this sausage souvlaki brings big Mediterranean flavours without the wait! To make, thread Compliments Chicken, Feta and Spinach  Sausages onto metal skewers, then grill on a barbecue at medium-high heat, turning occasionally. Meanwhile, prepare the tzatziki by combining Greek yogurt with coarsely grated cucumber, finely grated garlic, a squeeze of lemon juice, finely chopped dill, salt and pepper in a small bowl. Remove cooked sausages from skewers and slice each into thirds on the bias. To assemble, smear tzatziki mixture over warmed pita, then fill each with sausage pieces. Top with shredded iceberg lettuce, thinly sliced cucumbers half-moons and diced vine-ripened tomatoes. Finish with a sprinkle of crumbled feta cheese and dig in!

Herb-y Sausage Quiche

Weekend brunch just got an upgrade with this rich and savoury breakfast quiche! Start by baking a Compliments Deep Dish Pie Shell according to the package directions. Then, remove Chicken, Feta and Spinach Sausages from their casing and crumble them into a pan under medium-high heat. Cook until golden brown. In a large bowl, whisk together 6 eggs, 1 cup 35% cream and ½ cup 2% milk until smooth, then add finely chopped parsley and thyme leaves, and season with salt and pepper. Stir in cooled sausages and ¼ cup crumbled Compliments Feta Cheese. Scrape mixture into the prepared pie shell and bake at 325°F (163°C) until filling has set, 55 to 60 min. Let it rest for at least 1 hour, then slice and serve!
